Buffalo Chicken Salad
Recipe
Ingredients:
3 cups romaine lettuce, chopped
1 lb chicken breast tenderloins
½ cup shredded carrots
¼ cup mini cucumbers, sliced
¼ cup pickled red onions
¼ cup cherry tomatoes, halved
¼ cup avocado, cubed
¼ cup shredded white cheddar cheese
¼ cup crispy wonton strips
¼ cup buffalo sauce
¼ cup ranch dressing (store-bought is fine!)
Cook the Chicken: Heat a bit of oil in a skillet over medium-high heat. Season the chicken with salt and pepper, then cook for 3–4 minutes per side, or until golden and cooked through. Remove from heat and let rest for a few minutes.
Toss with Buffalo Sauce: Place the cooked chicken in a bowl and toss it with the buffalo sauce until well coated. Set aside.
Assemble the Salad: In a large bowl or on a platter, layer the chopped romaine lettuce as your base. Add the shredded carrots, cucumbers, pickled onions, cherry tomatoes, avocado, and cheddar cheese.
Top it Off: Add the buffalo chicken on top, then sprinkle with crispy wonton strips for crunch.
Dress it: Drizzle the ranch dressing over everything (or serve it on the side if you like to dip).
