Whenever I make chicken cutlets for dinner, I always make extra. They’re perfect on sandwiches, salads, or even cold straight from the fridge. This sandwich is one of my family’s favorites and a great way to feed a crowd with minimal effort. I like to buy one big baguette and make all the sandwiches for the day!
Ingredients:
1 large baguette
5 leftover chicken cutlets
2 ripe avocados, sliced
Cheddar cheese, sliced
Romaine lettuce leaves
1 large tomato, sliced
Honey mustard dressing
Instructions:
Slice the baguette in half lengthwise.
On the bottom half of the baguette, spread a generous layer of honey mustard dressing.
Arrange the chicken cutlets evenly across the baguette.
Lay the cheddar cheese slices over the chicken.
Layer the avocado slices, romaine lettuce, and tomato slices on top of the cheese.
Drizzle a little more honey mustard dressing over the top layer if you like extra sauce. Close the sandwich with the top half of the baguette.
Cut the baguette into individual sandwiches, depending on how many people you’re serving.
