Chicken Parmesan Recipe
This recipe is very similar to my chicken cutlet recipe, but here you go! Chicken Parmesan is one of my kids’ all-time favorites — they would gladly eat it every single night. They’re completely obsessed, and I have a feeling your kids will be too. Let me know if you make it!
Ingredients:
• 3 lbs. chicken breasts
• 2 cups all-purpose flour
• 4 large eggs
• 2 cups bread crumbs
• marinara sauce
• mozzarella cheese
• Olive oil (for frying)
• Sea salt (to finish)
Instructions:
1. Set up a dredging station with three shallow bowls: one for flour, one for whisked eggs, and one for bread crumbs.
2. Dredge each piece of chicken in the flour, dip in the eggs, and coat in bread crumbs.
3. Once all pieces are breaded, heat a generous amount of olive oil in a skillet over medium heat.
4. When the oil is hot, cook 2 cutlets at a time for about 3 minutes per side, until golden and crispy.
5. Transfer the cooked chicken to a wire rack set over a baking sheet and sprinkle with sea salt while hot
6. Preheat your oven to 400°F.
7. Place the fried cutlets directly onto a sheet pan. Spoon marinara over each piece, then top generously with shredded or fresh mozzarella. My kids definitely prefer shredded!
8. Bake for 10–15 minutes, or until the cheese is melted, bubbly, and slightly golden.
9. Add fresh basil if you’d like and serve with pasta, raviolis or on a hero!

Hi! I love this Substack and it’s made my life so much easier. I am just wondering, what kind of breadcrumbs do you use?
Should I get the chicken breast special cut so they will be thin enough?
