Hi everyone! Welcome to week 1 of Dinner Recap. Each week I plan to tell you what I cooked, what I thought, what the kids thought, and what I would do differently. I want this to be a space where I try recipes so you don’t have to! I have been cooking for my family for 13 years now and I have become really good at picking out recipes that work for families of all sizes. I am usually cooking for my family of 9 which means I double most recipes-but every recipe works for families big and small.
Our favorite from this week was definitely the one pan chicken and rice with caramelized lemons! This is a ‘Grossy Pelosi’
recipe. I really like his recipes and he has a very similar cooking style to me! My kids love chicken thighs so if you have been following along you have probably noticed we eat a lot of them. This is a one pot meal which means the cleanup is so easy!!! I especially love them for the nights when my husband is at work. The recipe is: Our 5/5 pickAnother meal we had this week was sloppy joes! My kids love sloppy joes. They are so easy to make and always pair well with fries and a salad. My older kids scarf these down and my one year old ate a deconstructed version and was obsessed. Here is the recipe I used: Sloppy Joes
This was my first time making the date night rigatoni with sausage. Two of my kids don’t love sausages so they really didn’t love this dinner. I thought it was really good. I didn’t think the kale would go over well with my young kids but it cooks into the pasta so nobody seemed to mind. Here’s the recipe: Date night sausage and rigatoni
If I’m being honest I’ve never tried ‘halal guys’ but I love the defined dish so I knew I wanted to give it a go. I love making dinners that each of my kids can customize for themselves with different toppings. If I can give a recommendation, I would say double up on the pitas! My kids loved stuffing the pitas with their own ingredients. My kids and I don’t eat yogurt so I subbed sour cream for the white sauce recipe and it came out so good. We were in the Catskills on vacation and my husband said he would make dinner for us!!! My two sisters and I poured a drink and went on a walk while he cooked. When we came back, dinner was done. This is one of my husbands go to dinners when he is on dinner duty. He marinates the skirt steak in Bachans Japanese barbecue sauce. Then he roasts the asparagus and tomatoes in the oven. It was delicious and just what we needed after a day on the lake. No recipe used for this one!
