Dinner Recap
Week 2
Hi everyone! Welcome to week 2 of Dinner Recap. Last week’s dinners were all new recipes that I’ve never made before. When I first sat down to plan my menu, I didn’t fully consider how nice the weather would be in New York or that I’d be spending most afternoons at the park after school. With that being said, the dinners all came out really good and I’d highly recommend each of them, but there were a good amount of steps in some of them! I will go into more detail under each of the dinners.
My 5/5 pic from this week was the baked rosemary chicken meatballs! If I’m being honest, this dinner was not a huge hit with my kids. My daughters, who are more adventurous eaters, didn’t mind it but it was still not their favorite. On the other hand my husband, sister, and I loved it. So if you plan on making this meal I think it would be perfect for date night. It also had a lot of steps so was annoying to cook after being at the park all afternoon and having 2 kids at my feet while doing it.

Another meal we had this week was skirt steak with orzo salad and red pepper sauce. We love skirt steak around here. This was such a great meal for summer. If i was going to make this again the only thing I would do differently would be to do certain things in advance. I did this all at once so it took a bit of time, but next time I would make the red pepper sauce, the orzo salad and steak marinade in the morning. This way when dinnertime came all I would need to do would be grill the steak. But overall, this dinner was a hit. My favorite part was definitely the red pepper sauce!!! The recipe is Here!
We had grilled chicken with summer garden pasta! This is such a perfect recipe for summer! Tomato season is definitely my favorite season so I am so excited to make this recipe all summer! My boys don’t love tomatoes so I made them string beans on the side. One of my daughters tried tomatoes for the first time in this recipe and loved them. I was so excited! Here is the Recipe!
We had herby brown butter chicken and farro with burst tomatoes. This was delicious but had a lot of steps and was not a huge hit with the kids. I’d make it again but it would have to be for a lunch or a date night dinner because it wasn’t the most kid friendly. Here is the Recipe
We also had crockpot chipotle pot roast tacos. I have never thought to use chuck roast as a taco meat before this recipe, but I am so glad I tried it! I threw this dinner in the crockpot before we went to the beach and was so glad I did when we got home. The meat was so tender and was perfect in a taco with all the toppings. This will definitely be on repeat all summer when we’re at the pool so dinner is ready when we get home! The recipe is Here!
Then over the weekend I made hamburger helper and simple beef tacos. My husband worked Saturday so it was only me and the kids home. I love this dinner so much. Only one pot to clean and comes together in a half hour. Its also just one of those dinners that all my kids will eat. Highly recommend!!
My kids love tacos in any form. My husband made this dinner for us Sunday night. It was easy and the kids loved it.

Definitely trying out that garden pasta. Looks delicious! It’ll have to be a day I plan ahead. Four hours of ingredients sitting makes me impatient!
