Week 6
Welcome to week 6 of the Dinner Recap!
Winner of the week: Cheesesteak Sliders
These were a big hit with my family—especially my husband and teenage boys! Super quick to throw together on the Blackstone, but you could easily make them in a regular pan too. I did half with shredded mozzarella and half with American cheese, and the American cheese totally won everyone over!
Chicken and Mozzarella Pasta:
If you’re looking for an easy weeknight dinner the kids will actually get excited about, this one’s a winner! It uses ingredients I pretty much always have on hand—and it’s full of things my kids already love. It pairs well with just about any veggie or even a simple salad, but around here, roasted broccoli loaded with parmesan is the go-to side!
Smothered Pork Chops
I’m not usually a big pork person, but I devoured these! Pork is one of the most budget-friendly cuts of meat out there, and this recipe totally made me a fan. I get my chops from Whole Foods—they’re super thick, so I sliced each one in half to make thinner cutlets. The gravy was so good! I served them with simple roasted potatoes, but mashed potatoes would be amazing with this too. Definitely making this one again!
Teriyaki Sheet Pan Chicken:
If you’ve been following along, you know I’m all about a good sheet pan dinner—and this one did not disappoint! I just grabbed whatever veggies I had in the fridge, tossed them on a big sheet tray with the chicken, and popped it all in the oven. Paired it with rice from the rice cooker, and dinner seriously couldn’t have been easier!
Chicken Fajitas:
I threw these together on Sunday night using whatever I had left in the fridge. I had two packs of chicken thighs, a bag of peppers, and a couple of ripe avocados—perfect for a quick fajita night. I always have taco shells on hand, so this was an easy choice. They come together fast, and my kids love anything in taco form!
