Winner of the Week: Burger Bowls
These were a huge hit with the kids. I set everything out on the counter and let everyone build their own bowls, and not one complaint! My 6-year-old even declared they were way better than regular burgers. The burger sauce really stole the show.
White Chicken Enchiladas
My kids usually love enchiladas, but these missed the mark for most of them. My husband, oldest daughter, and I thought they were delicious, but the rest of the table gave them a solid “mid.” They were definitely on the heavier side, so not something I’d make often—but still flavorful and worth trying if you’re a fan of creamy, cheesy dinners.
Chicken & Chickpea Tray Bake
This dinner was as easy as it gets. I tossed everything onto a sheet pan, popped it in the oven, and about an hour later—done. I made two trays since we had family over, and everyone enjoyed it. Next time I would add a sauce. Still, it was a great healthy, low-effort dinner for a busy weeknight.
Baked Ziti
First time making baked ziti at home (instead of eating it off a lukewarm party tray), and I was pleasantly surprised. It was comforting, flavorful, and the kids ate it up. Plus, it’s perfect for making ahead. We served it with garlic bread and a Caesar salad, and it ended up being a cozy, crowd-pleasing dinner.
Smash Burgers
We kept things simple for my son’s Confirmation on Saturday and hosted a backyard BBQ instead of going out. I made smashburgers on the Blackstone, along with corn, fries, and a BLT pasta salad. The burgers are super easy to crank out in big batches, and that pasta salad? Definitely adding it to my party rotation—it held up perfectly after sitting in the fridge all day.
