Homemade Chicken Soup With Orzo

Ingredients
• 1 whole chicken (or bone-in chicken pieces)
• Water, enough to cover the chicken
• 3–4 carrots, peeled and sliced
• 3–4 celery stalks, sliced
• i head of broccoli
• 1 head of cauliflower
• 1 large onion, diced
• Salt and pepper, to taste
• 1–2 bay leaves
• Fresh parsley
• Orzo, cooked separately
Instructions
Make the Chicken & Broth Base
Place the whole chicken in a large pot and cover fully with water.
Bring it to a boil, then reduce to a simmer and cook until the chicken is fully cooked and tender (about 1–1.5 hours)
Remove the chicken from the pot and let it cool slightly.
Pull all the meat off the bones, shred it, and set aside.
Return all the bones (and any skin, if you want extra flavor) back into the pot.
Simmer the bones all day—at least 4–6 hours, longer if you can. Add water as needed to keep everything covered.
Strain the Broth
After simmering, strain the broth into a clean pot and discard the bones.
Taste and season with salt and pepper.
Cook the Soup
Add the shredded chicken back into the strained broth.
Add the carrots, celery, broccoli, and onion.
Add bay leaves if using.
Simmer the soup until the vegetables are tender (about 25–35 minutes).
Taste and adjust seasoning.
Cook the Orzo Separately
Boil the orzo in salted water according to package directions.
Drain and keep it separate so it doesn’t soak up all the broth.
Serve
Add a scoop of orzo to each bowl, then ladle the hot chicken soup over top.
Garnish with fresh parsley or dill if you like.
