Ingredients
• 1 cup dry couscous
• 1 cup boiling chicken broth or water
• 2 tbsp olive oil
• 1 head romaine lettuce, chopped
• 1–2 cups cooked chicken cutlets, chopped
• ½ cup cherry tomatoes, halved
• ¼ cup red onion, thinly sliced
• ¼ cup pepperoncini, sliced
• ½ cup fresh mozzarella pearls or shredded mozzarella
• ¼ cup grated parmesan cheese
