Lake Trip Meal Plan
We went on a lake trip up to the Catskills this week, and I thought I’d share a little bit about how we feed a crowd while we’re there. The town we stay in is right on the lake, but there’s nothing to eat within walking distance so that means a lot of cooking!
There were 15 of us altogether, so we had to plan ahead. Before the trip, my mom, sister, and I chatted about easy meals we could throw together after long days on the water. I don’t always want to make something extravagant when we’re on vacation, but everyone still has to eat!
My mom did a big Costco run, and I placed a Whole Foods order ahead of time. Since our Whole Foods is right on the way, I scheduled a pickup for the time we were leaving, and it couldn’t have been easier

I cannot recommend this griddle enough! LINK! We used it on this trip to make bacon, eggs, and grilled cheeses and it made cooking for a crowd so much faster and easier. It’s truly a game changer when you're feeding a bunch of people!
Walking Tacos
We knew we wanted to do tacos of some sort so we decided on walking tacos and regular tacos with grilled corn on the side. The main prep for this meal was cooking the ground beef with taco seasoning and making a big bowl of guacamole. Everything else was just chopping and putting toppings into bowls.
I can't recommend walking tacos enough. The kids thought it was so fun to eat out of the chip bags, and for the adults who weren’t into it, they just made regular tacos instead. Last time we were away, my husband Uber Eats’d Taco Bell for the kids and this meal probably cost a quarter of the price and tasted so much better.
Steak Night
We love picking up the four-pack of ribeyes from Costco. They're always delicious and perfect for feeding a crowd. The pack costs around $90, but it fed all 15 of us with no problem.
We served the steaks with baked potatoes (such an easy, no-effort side), string beans, and sautéed mushrooms. It was the perfect vacation dinner
