Make-Ahead Mashed Potatoes

Hi! Here is how I have been making my mashed potatoes for years!
Ingredients
• 1 bag russet potatoes, peeled and cut into chunks
• 1 stick butter
• ¾–1 cup heavy cream
• ½–1 cup whole milk
• Salt and pepper, to taste
Instructions
Bring a large pot of salted water to a boil. Add the potatoes and cook until very tender, about 15–20 minutes. Drain well.
In the same pot, melt the butter over low heat. Add the heavy cream and whole milk and warm gently.
Run the cooked potatoes through a potato ricer directly back into the pot with the warm butter and cream mixture.
Stir gently until smooth and creamy. Season generously with salt and pepper.
Transfer the mashed potatoes to a baking dish, spread evenly, cover tightly, and refrigerate until ready to use.
To Reheat
Preheat the oven to 350°F.
Bake the mashed potatoes, covered, for about 20 minutes or until heated through.
Stir well, taste, and adjust seasoning if needed. Add a splash of milk or cream if they need loosening.
