Quick and Easy Lunch Idea
Sweet and Spicy Noodles with Grilled Chicken
I make a version of this from scratch, but when I’m short on time, these grocery store Asian noodles come in handy.
Ingredients:
1 lb boneless, skinless chicken thighs
1 pack Momofuku Sweet & Spicy Noodles
2–3 tablespoons Momofuku Sweet & Savory Korean Barbecue Sauce
¼ cup roasted peanuts, roughly chopped
2–3 green onions, thinly sliced
A handful of fresh cilantro, chopped
Instructions:
Marinate the Chicken:
Place the chicken thighs in a bowl or zip-top bag and coat them with the Momofuku Sweet & Savory Korean Barbecue Sauce. Let marinate for at least 30 minutes
Grill the Chicken:
Preheat your grill to medium heat. Grill the marinated chicken for about 5 minutes per side, or until the internal temperature reaches 165°F (75°C). Let the chicken rest for a few minutes, then slice thinly.
Cook the Noodles:
Boil the Momofuku Sweet & Spicy Noodles according to package instructions (about 3 minutes). Drain and mix in the included sauce packets until well coated.
Assemble the Bowl:
Divide the noodles into bowls. Top with the sliced grilled chicken, chopped
peanuts, green onions, and fresh cilantro.
This came together in 20 minutes and the leftovers are perfect the next day. This would be great for meal prep.
