Roasted Broccoli
I’m a mom of 7 and I love making roasted broccoli as a side for dinner. It’s a veggie my kids love and it’s so simple and quick. Here is my recipe I use a couple days a week. If a have a busy night or if the kids have sports I will cut the broccoli into florets during nap time so dinner is as simple as possible.
Ingredients
2 heads broccoli, cut into florets
3 tbsp olive oil
3 cloves garlic, minced
½ tsp salt
¼ tsp black pepper
¼ tsp red pepper flakes (optional, for heat)
Juice of ½ lemon
2 tbsp grated Parmesan cheese (optional, for serving)
Instructions
Preheat your oven to 425°F. Line a baking sheet with parchment paper.
In a large bowl, toss the broccoli florets with olive oil, garlic, salt, pepper, and red pepper flakes until evenly coated.
Spread the broccoli in a single layer on the prepared baking sheet. Make sure they’re not overcrowded so they get nice and crispy.
Roast for 18–22 minutes, flipping halfway through, until the edges are golden brown and slightly crispy.
Remove from the oven and squeeze fresh lemon juice over the broccoli.
Sprinkle with Parmesan cheese and serve hot.
