Salmon Bowl
Serves: 4
Time: ~25 minutes
Ingredients
Salmon
• 1½ lbs salmon, cut into 1½–2 inch cubes
• 2 tbsp olive oil
• 2 tbsp soy sauce
• 1 tbsp honey
• 1 tsp garlic powder
• 1 tsp paprika
• ½ tsp black pepper
Bowls
• 3 cups cooked jasmine rice
• 1 avocado, sliced
• 1 cup cucumber, sliced or diced
• 1 cup shredded carrots
• ½ cup edamame (optional)
• Green onions & sesame seeds, for topping
Yum yum sauce
• ½ cup mayo
• 1–2 tbsp sriracha (to taste)
• 1 tsp soy sauce or coconut aminos
• Juice of ½ lime
Instructions
1. Preheat air fryer
Preheat to 400°F for 3–5 minutes.
2. Season the salmon
Toss salmon cubes with olive oil, soy sauce, honey, garlic powder, paprika, and pepper until evenly coated.
3. Air fry the salmon
Place salmon in a single layer in the air fryer basket (work in batches if needed).
Air fry at 400°F for 7–9 minutes, shaking halfway, until cooked through and lightly crispy on the edges.
4. Make the sauce
Mix mayo, sriracha, soy sauce, and lime juice until smooth.
5. Assemble the bowls
Add rice to bowls, top with salmon, avocado, cucumber, carrots, and edamame. Drizzle with sauce and finish with green onions and sesame seeds.
