Southwest Chicken Bowl
Easy Lunch Recipe
Ingredients
• 2 cups cooked chicken, chopped or sliced (grilled, baked, or leftover cutlets)
• 2 cups cooked rice (white, brown, or cilantro-lime)
• 1 cup black beans, drained and rinsed
• 1 cup corn (fresh, frozen, or canned)
• 1 head romaine lettuce, chopped
• ½ cup cherry tomatoes, halved
• ½ cup shredded cheddar or Mexican-blend cheese
• Optional toppings: avocado, tortilla chips or strips, pickled red onion, jalapeños
Southwest Dressing (or Sauce)
• ½ cup ranch dressing
• 2–3 tbsp salsa or taco sauce
• ½ tsp chili powder or taco seasoning
• Optional: squeeze of lime juice
Instructions
1. Warm the chicken with a sprinkle of taco seasoning if desired.
2. In bowls, layer rice, romaine, chicken, black beans, corn, and tomatoes.
3. Drizzle with the Southwest dressing.
4. Top with cheese and any extra toppings you like.
5. Serve immediately.
Tips
• Great for meal prep! I keep dressing on the side.
• My kids love this deconstructed so they can pick what they want.
