I love making quick and easy salads during the summer, whether for a light lunch or a simple dinner side. They’re refreshing, satisfying, and filling. This one is a go-to for me because I almost always have the ingredients on hand, and it comes together in just 25 minutes.You can keep it vegetarian or add grilled chicken for extra protein.
INGREDIENTS:
• 3 cups couscous
• 1/2 cup olive oil
• 1 tablespoon Dijon mustard
• 1 teaspoon maple syrup
• 1/4 cup lemon juice
• 5 mini cucumbers, diced
• 3 Roma tomatoes, diced
• 1/2 cup chopped walnuts
• 1/4 cup dried cranberries
• Grilled chicken (optional)
Instructions:
1. Cook the couscous according to package instructions. Once cooked, fluff with a fork and let it cool slightly.
2. In a small bowl or jar, whisk together the olive oil, Dijon mustard, maple syrup, and lemon juice to make the dressing.
3. In a large bowl, combine the cooked couscous, diced cucumbers, tomatoes, walnuts, and dried cranberries.
4. Pour the dressing over the couscous mixture and toss well to combine.
5. Taste and adjust seasoning if needed with salt and pepper.
6. If using, slice the grilled chicken and serve on top or mix it in.
7. Serve chilled or at room temperature.
