Taco Ranch Pasta Salad
Here is everything you need to make this taco ranch pasta salad!
Ingredients
1 lb rotini or bowtie pasta
1 lb ground beef or ground turkey
1 packet taco seasoning
1 cup cherry tomatoes, halved
1 cup canned corn, drained
1 cup black beans, rinsed and drained
1 red bell pepper, diced
½ cup red onion, finely diced
1 ½ cups shredded cheddar or Mexican blend cheese
1 cup crushed tortilla chips (plus extra for topping)
1 ½ cups ranch dressing primal kitchen ranch link!!!!
½ cup salsa
¼ cup fresh cilantro, chopped (optional)
Instructions
Boil pasta in salted water according to package directions. Drain, rinse under cold water, and set aside.
In a skillet over medium heat, cook ground beef until browned. Drain grease, then stir in taco seasoning and ¼ cup water. Simmer for 2–3 minutes until coated. Let cool slightly.
In a small bowl, whisk together ranch dressing and salsa until smooth.
In a large mixing bowl, combine pasta, taco meat, tomatoes, corn, black beans, bell pepper, onion, cheese, and cilantro. Pour dressing over top and toss until everything is well coated.
Just before serving, stir in crushed tortilla chips (so they don’t get soggy).
Garnish with extra cheese, cilantro, or tortilla chips on top.
Tip: This can be made ahead—just keep the tortilla chips separate until serving.
